I liked to eat breakfasts that are a little more filling, so I decided to make this recipe and it turned out great.

 

Description: Cheesy baked potatoes with eggs and cheese

Pyrex baking dish size 9 x 13

Ingredients:

5-6 Red potatoes, peeled and sliced, ¼ inch thick

¼ cup cooking oil

Salt

Pepper

4 Sausages (cooked)

5 eggs

¼ TSP baking soda

½ TSP garlic powder

¼ TSP dried basil

¼ cup milk

½ – 1 cup shredded cheese

 

 

How to make Baked Potatoes with Eggs and Cheese:

 

Spread oil on the bottom of pan. Rub salt on peeled and sliced potatoes, cover and bake at 350 degrees in the oven for 25 – 35 minutes or until potatoes are ready.

When potatoes are ready, remove from the oven and put sliced sausages on top. Whisk 5 eggs, ¼ TSP baking soda for about 1 min. Then whisk in ½ TSP garlic powder, and ¼ TSP dried basil for about 1 minute, then whisk in ¼ cup milk. Pour evenly on top and bake uncovered till eggs are fully cooked, about 7 – 10 minutes. Then sprinkle cheese on top and broil for about 1 – 2 minutes until cheese turns golden. Enjoy!
