Breakfast Shredded Potatoes
I like to make hash browns,
but I am not fond about frying them so much, even though it tastes good. So I thought of baking it instead. I got this inspiration from Waffle House. When I first tasted it, it didn’t look fried to me. So I thought of baking potatoes instead of frying. Enjoy!

Ingredients:
5 cups shredded potatoes, (red recommended)
2 eggs
3 TBSP cooking oil
Salt
Pepper
¼ TSP garlic powder
How to make Breakfast Shredded Potatoes:
Preheat oven to 400 degrees. Combine shredded potatoes, eggs, salt, pepper and garlic powder in a bowl. In a baking sheet spread cooking oil to prevent sticking. Mix the potatoes with the ingredients very well, then add it evenly on a baking sheet. Bake at 400 degrees for about 30 minutes until cooked through and crispy on top. Enjoy with toppings like sautéed onions and mushrooms, cheese and egg on top.
