Cabbages are one of our favorite veggies, and we eat this at least once a month. We enjoy this with lunch and dinner. This salad has a lot of vitamins and minerals and my husband never gets tired of this salad.
Prep time: 30 minutes

Dressing-
1 TBSP of lemon juice
3 TBSP of mayo
3 TBSP of plain yogurt
1 TSP of sugar
½ TSP of salt
1 garlic clove, grated
Salad-
½ large or 1 small cabbage
1 bell pepper or 5-6 mini peppers
1 large or 2 small carrots, peeled and grated
½ medium onion
For the dressing: In a small bowl add 3 TBSP of mayo, 3 TBSP of plain yogurt, 1 TSP of sugar, ½ TSP of salt, 1 grated garlic clove, 1 TBSP of lemon juice. Mix well with a fork, cover and put it in the fridge and start the salad.
Wash veggies. Using a mandoline or a knife, slice 1 small head or ½ a large head cabbage and put it in a mixing bowl.
Dice the bell peppers.
Dice half of a medium onion.
Peel and grate the carrot(s).
Add everything into the mixing bowl. When ready, pour the dressing over the salad and mix well. Or if you are serving for yourself only, spoon the dressing into your individual salad plate to preserve the salad.
Note: After mixing the dressing and salad, add more yogurt and or mayo if it is not enough.
