Easy delicious Chicken Barley Supreme that will please your taste buds


Units Scale
  • 1 LB chicken, cooked and shredded
  • 1/4 to 1/2 cup cooking oil
  • 1/2 onion, chopped
  • 1/2 cup celery, chopped
  • 1/2 cup carrots, shredded
  • 4 ounces mushrooms, chopped
  • 1 cups sour cream or plain yogurt
  • 3 tablespoon soy sauce
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 cups cooked Barley (1 cups I
  • uncooked)
  • Parsley sprigs, for serving, optional


  1. Preheat oven to 350°F. Grease 3-quart casserole. Set aside.
  2. Saute onions, celery and carrots in oil for about 5 minutes or until onions are semi-transcluscent. Then throw in the mushrooms and sauté for 2 minutes.
  3. In a small bowl combine sour cream or plain yogurt, soy sauce, salt and black pepper & mix well.
  4. Combine cooked barley, cooked shredded chicken, veggie mixture and plain yogurt and toss lightly.
  5. Place mixture in greased baking dish and cover. Bake 25 to 30 minutes.
  6. Season to taste. Garnish with parsley.




Equipment: One large bowl, large casserole dish (9 x 13 x 2.5 inches that is 3 QT or 2.8 L)
