This chicken meal in one recipe is easy and delicious to make. Brown the chicken, saute the veggies, mix in the spices and add in the barley in to a roasting pan and bake. This is great to have for the rest of the week and pack for lunch.

Barley has wonderful health benefits, per healthline.com is reduced hunger, may help with weight loss, may prevent gallstones and reduce risk of gallbladder surgery, may reduce heart disease risk, rich in fiber which helps with digestion, etc.

Ingredients:

1 pound chicken breast or thigh, diced
8 oz green beans, thinly sliced
3 medium carrots, grated
1 medium onion, diced
4 oz mushrooms, diced
1 1/2 cups barley, rinsed
4 cups water
Salt
Pepper

How to make Chicken Barley Meal in One:

Add a swish of oil in a medium pot and brown the chicken, then set aside.
Next saute the green beans for about 5 minutes on medium heat until it is semi-softened.
Then, add and saute carrots and onions until onions are semi-transcluscent and add in the mushrooms and sauté for about 2 minutes.
Add salt and pepper, barley, water and chicken and mix well.
Add to a greased casserole baking dish and bake at 375 degrees F for 50 minutes and until barley and chicken is cooked through. Chicken will be when it is cut into and juices are clear.

Notes:


The internal part of the chicken should register at 165 ℉ (75 ℃) when done cooking and juices should run clear when pierced.

Cook/bake time may change when changing ingredients portions.

Substitutions:

If your original recipe includes chicken, can you offer a vegetarian substitution? Garbanzo beans, black or white beans will work fine.

Storage instructions:

How should the food be stored — in the fridge or at air temperature? Fridge.
How long will the food stay fresh? About 3 to 4 days, but possibly longer.
Can the food possibly be stored in the freezer for a few months? This can be frozen for up to three months, but possibly longer.
