Chicken Tacos with Cabbage and Sweet Potatoes

 

I like making these recipes when I don’t have much time to cook. Although I still have to cut and peel and get veggies ready, instant pot saves me time. And Mexican food is one of my favorites. I love making these.

Ingredients:

4 chicken thighs

1 medium sweet potato, peeled and chopped

½ onion, chopped

1/2 Jalapeno (half seeded)

¼ TSP Chili Flakes

¼ TSP garlic powder

salt and pepper

¼ cup water

 

How to make Chicken Tacos with Cabbage and Sweet Potatoes:

 

Add chicken, veggies, spices and ¼ water into the instant pot. Make sure vent is closed. Cook on high on pressure cooker for 12 minutes. With a kitchen glove, press the button for it to vent all the way before opening lid. Afterwards, lay foil on a cookie sheet and put everything on the cookie sheet and broil for 10-15 till crisp. Enjoy with tortillas and toppings of your choice!
