Easy with an instant pot and delicious. A quick fix when you are craving for some Mexican food.


  • 4 chicken thighs
  • 1 medium sweet potato, peeled and chopped
  • ½ onion, chopped
  • 1/2 Jalapeno (half seeded)
  • ¼ TSP Chili Flakes
  • ¼ TSP garlic powder
  • salt and pepper
  • ¼ cup water


  1. Add chicken, veggies, spices and water into the instant pot. Make sure vent is closed.
  2. Cook on high on pressure cooker for 12 minutes.
  3. With a kitchen glove, press the button for it to vent all the way.
  4. Afterwards, lay foil on a cookie sheet and put everything on the cookie sheet and broil for 10-15 till crisp. Enjoy with tortillas and toppings of your choice!
