Creamy Bell Pepper Gravy Sauce

This Creamy Bell Pepper Gravy Sauce recipe is wonderful for holidays or special occasions.

 

This topping tastes good over potatoes or something like rice. We prepare this recipe on special occasions during family gatherings and celebrations, or anytime I want to use this as a topping. I always put the leftovers in a sealed tight glass jar and it should last for about three months. However, before using the glass jar, I first wipe it with vinegar to disinfect it.

1 cup of cooking oil

1 medium onion, finely diced

2 carrots, grated

3 colors of bell peppers, finely diced

3-4 cloves of garlic, grated

1 teaspoon of Vegeta

3 TBSP of heaping mayo

3 TBPS of heaping sour cream

Recommended: Cut and prepare all the veggies ahead of times.

In a deep pan (like a dutch oven), heat oil on medium and add onion and sauté for 2-3 minutes. Add grated carrots and turn down to medium-low, occasionally mixing to prevent from burning and sauté for about 3 minutes.

Next add finely diced bell peppers and sauté for 5-10 minutes or until softened.

Then add 1 teaspoon of Vegeta and 3-4 cloves of grated garlic and sauté for 2-3 minutes.

Then add 3 heaping TBSP of mayo and 3 heaping TBSP of sour cream, mix the ingredients very well, and sauté for another minute then done.

Enjoy this gravy over mashed potatoes or rice.

Notes
