Curry Marinated Chicken with Barley

Chicken and barley with some curry flavor is a simple recipe. Marinate the chicken, saute veggies, combine all ingredients, cover and bake. Simple enough.

Barley has several health benefits such as reduces hunger, improves digestion, may prevent gallstones and reduce your risk of gallbladder surgery, may help lower cholesterol, may reduce heart disease risk (per healthline.com).

Ingredients:

Barley
2 cups barley, rinsed

Marinade
1/2 Teaspoon Garlic powder
1 teaspoon curry powder
1/2 teaspoon paprika powder
1/2 teaspoon Worcestershire sauce
1/4 teaspoon black pepper
1/4 teaspoon salt
1/3 cup oil, for sauce
3 tablespoon of cooking oil + more (for sautéing)
4 chicken thighs &
4 chicken legs

Saute
2 medium carrots, diced
1/2 onion, diced
Swish of cooking oil

3 1/2 cups water

How to make Curry Marinated Chicken with Barley:

Barley: Rinse barley and set aside.

Marinade: Mix all the marinade spices with the oil and marinate chicken, cover, set aside.

Saute: Next, saute carrots and onions until onions are semi-translucscent, then saute with barley for 2 minutes and mix well.

Combine: Put the barley veggie mixture in the greased baking pan, top with the marinated chicken and brush the rest of the sauce on it.

Bake: Add water, cover, bake at 350 F for 50 min, then uncover and bake for 15 – 20 minutes.

Notes:

Completion of chicken: The internal part of the chicken should register at 165 ℉ (75 ℃) when done cooking and juices should run clear when pierced.

Cook/bake time may change when changing ingredients portions.

How much does barley expand? 1 cup of uncooked barley expands to 3 cups of cooked barley.

Storage instructions:

How long will the food stay fresh in the refrigerator? 4 – 5 days fully covered.
Can the food possibly be stored in the freezer and for how long? 2 months possibly longer.
Does this save well as left overs? Yes.

Reheating instructions: In a pan add some water and cooking oil and add in the dish and cook until heated through.
