My mom came over recently with my uncle and we took them to visit San Francisco, a Capitol Building, Downtown, Stanford Mansion and then an apple farm. We bought a box of macintosh, therefore my mom decided to make a dessert out of it. She made this easy apple cake and we all enjoyed it with black tea and some milk and honey. This is an easy recipe for almost any occasion. I hope you will enjoy it just as much as we did.

Easy Apple Cake
Ingredients:
3 large eggs, room temperature
8 – 9 canola oil
1 cup xylitol (or sugar)
1 TSP baking soda
1 TBSP white vinegar
1 cup cup flour
6-7 medium apples, room temperature
1 TSP vanilla
Oil to prevent sticking
How to make Easy Apple Pie:
Mix in blender 3 eggs,1 cup of sugar/xylitol. Blend it very well until it rises and is puffy and doubles the size (check).
Take 1 TSP baking soda and mix with 1/2 TBSP white vinegar until dissolved (add a little more vinegar as necessary to fully dissolve the baking soda).
Add the baking soda mixture to the batter and mix well. Then add 1 cup flour by running through a sieve and continuously mixing with a spoon gently.
Dice 6 -7 medium apples.
Spray oil on the baking pan and add the diced apples. Then add the batter to the pan just enough, and make sure to shake out the batter.
Bake at 350 degrees for 60 minutes. Check the center of the cake with a toothpick at 45 minutes. Be sure to be patient to make sure this is baked all the way.
Note: Add flour at last minute.
