Easy Baked Spinach with Cheese

I love the flexibility of spinach, whether raw in a smoothie or baked with cheese or even made with soup. I was craving for some spinach and cheese

and looked up a recipe at all recipes, but decided to definitely change it out and make it more simple and easy to make, but yet still delicious. I looked up my flavor bible on spinach to find a good herb to match with it, and chose dill. This Easy Baked Spinach with cheese came out delicious. And instead of white flour, I chose barley flour (whole wheat flour should work on this recipe, and might be better to reduce it down to 2 TBSP, it will cook longer than white flour).

9 inch by 13 inch by 1 ½ inch deep

Ingredients:

1 ¼ LB spinach

¼ cup butter

¼ cup barley flour or 2 TBSP WW flour

Salt

Pepper

1 – 2 garlic cloves (or ¼ TSP garlic)

1 TBSP dill, fresh (or ½ TSP dried dill)

¾ cup milk

¾ cup mozzarella cheese, shredded

How to make Easy Baked Spinach:

  1. Rinse and drain spinach. 
  2. Melt the butter and add flour and cook for 3 – 4 minutes on medium heat and mix well, until cooked through. 
  3. Add salt, pepper, garlic and dill and sauté for 30 seconds. 
  4. Then add milk and simmer on medium low for 3 minutes and set aside.
  5. Preheat oven at 350 F degrees. 
  6. Drain spinach again and spread it on the baking dish. Pour the milk mixture over it and spread evenly with a wooden spoon. Then put cheese on top and bake for 45 – 50 minutes. When done, let it stand for 5 minutes. Enjoy.

Notes: Whole wheat flour will cook longer than white flour.
