I got this Easy Carrot Salad recipe from my aunt birthday Marina K. This is such an easy recipe and is one of my husband’s favorite salad.

In this Easy Carrot Salad recipe the salt and garlic flavor gives a yummy combination because it compliments the carrots.

Ingredients:

Salad:

2 LBS Carrots (peeled & washed), grated (5 cups, packed)

Dressing

1 cup whole milk plain yogurt

¼ cup olive oil (not virgin)

Sea salt

1 to 2 garlic cloves, grated

How to make Easy Carrot Salad Recipe:

Peel, wash, pat dry and grate carrots in a separate bowl, cover and set aside. 

Then make the dressing: In a separate cup or bowl, combine:

1 cup whole milk plain yogurt, ¼ cup olive oil (not virgin), Sea salt, 1 to 2 grated garlic cloves. Mix the dressing very well.  Pour the dressing over the grated carrots and mix very well. Enjoy! Refrigerate left overs.

Notes: The salad tastes better after it has been refrigerated overnight because salad gets cold and the flavors mingle.
