Easy Chicken Salad I

This easy Chicken Salad tastes so good because it has a savory flavor

(the honey, mustard and lemon juice, yum!). I used my Flavor Bible to come up with a dressing. Have your chicken cooked ahead of times, or even use left over roasted or slow cooked chicken and if you have the rest of the ingredients, voila! Or even slow cook a whole chicken to use for other recipes such as this Easy Chicken Salad. This can be eaten as a main dish with bread as  a sandwich. Yum!

Ingredients:

¾ cup Plain Greek Yogurt

2 TBSP Olive Oil

Salt

Black Pepper, freshly ground

1 clove garlic, grated

1 TSP mustard

1 TSP Honey

1 TSP Lemon juice

parsley for garnish

2 medium sticks celery, sliced (3 oz)

½ medium onion, diced (3 oz)

3 TBSP chopped parsley, fresh or frozen

1 cup grated carrots, packed

12 oz chicken, (fully cooked & shredded)

How to make Easy Chicken Salad I:

In a separate bowl add ¾ cup Plain Greek Yogurt, 2 TBSP Olive Oil, Salt, freshly ground black pepper, 1 clove grated garlic, 1 TSP mustard, 1 TSP Honey and 1 TSP Lemon juice. Mix very well, cover and set aside.

Next in a separate bowl add 2 medium sliced celery sticks, , ½ medium diced onion,  3 TBSP chopped parsley, 1 cup grated carrots,  and 12 ounces fully cooked and shredded chicken. Mix the salad, then add the dressing and mix again. Enjoy!

Notes:  Dressing can be done a day in advance, covered and refrigerated.
