Yummy savory easy Chicken Salad


  • ¾ cup Plain Greek Yogurt
  • 2 TBSP Olive Oil
  • Salt
  • Black Pepper, freshly ground
  • 1 clove garlic, grated
  • 1 TSP mustard
  • 1 TSP Honey
  • 1 TSP Lemon juice
  • parsley for garnish
  • 2 medium sticks celery, sliced (3 oz)
  • ½ medium onion, diced (3 oz)
  • 3 TBSP chopped parsley, fresh or frozen
  • 1 cup grated carrots, packed
  • 12 oz chicken, (fully cooked & shredded)


How to make Easy Chicken Salad I:


  1. In a separate bowl add ¾ cup Plain Greek Yogurt, 2 TBSP Olive Oil, Salt, freshly ground black pepper, 1 clove grated garlic, 1 TSP mustard, 1 TSP Honey and 1 TSP Lemon juice. Mix very well, cover and set aside.
  2. Next in a separate bowl add 2 medium sliced celery sticks, ½ medium diced onion,  3 TBSP chopped parsley, 1 cup grated carrots,  and 12 ounces fully cooked and shredded chicken.
  3. Mix the salad, then add the dressing and mix again. Enjoy!


Notes:  Dressing can be done a day in advance, covered and refrigerated. Prep/Cook/bake time may change when changing portions of ingredients.
