Mexican food is one of my favorite cuisine.
I got Inspired to make this recipe by “All Time Family Favorites Cassroles and One Dish Meals” by Publications International limited. And what makes this recipe easy is that my chicken was already completely cooked in the crock pot ahead of times and all I had to do is put the ingredients together in a baking dish, and voila, just bake it. I have made this a few times and decided to share this recipe.

Ingredients:
12 oz chicken (fully cooked and shredded)
1 medium tomato (7 oz)
1/8 TSP chili powder
¼ TSP garlic powder
¼ TSP dried oregano
sea salt
14 oz can pinto beans
1 egg
3 TBSP dairy sour cream or plain yogurt
1 cup shredded cheddar cheese
How to make Easy Mexican Casserole with Chicken:
1. Preheat oven at 350.
2. Meanwhile, toss chicken, diced tomatoes and spices. Mix well. Put in baking dish.
3. Drain beans and put beans on top.
4. Mix salt, egg, sour cream and spoon over casserole, cover and Bake on 350 for 20 – 25 minutes.
5. Next, remove from oven and put shredded cheese on top evenly and broil for a couple of minutes, till cheese melts. Enjoy!
