This easy roasted lamb recipe is so simple and easy to make, truely a fool proof recipe. I find that lamb is an easier meat to consume versus beef.
According to Capra Foods lamb meat is a fantastic source of iron, vitamin B, has anti-inflammatory assets, and a healthy source of protein. Personally, I find that lamb is easier to digest than beef. This is great for Easter Holiday and a crowd pleaser. This pairs well with mashed potatoes or rice.

Ingredients:
4 – 5 lbs Lamb leg
12 garlic cloves, peeled
1/4 TSP cumin
5 TBSP soy sauce
1 TBSP olive oil
Salt
Pepper
1/2 TSP Smoked Paprika
How to make Easy Roasted Lamb:
Rinse lamb leg and make several holes to fit garlic cloves inside.
In a seperate bowl combine cumin, soy sauce, olive oil, salt, pepper and smoked paprika, and mix very well.
Rub and massage it into the lamb.
If possible, cover and marinate in the fridge overnight.
The lamb fat side need to be facing up when baking. In a roasting pan and fully covered with foil or dutch oven (recommended) with closed lid, bake at 325 degrees F for 30 minutes per pound for it to be well done (mine took 2 and a 1/2 hours to roast).
Insert instant thermometer in the thickest part of the meat, that’s not touching the bone and it should read 145°F.
When lamb is ready and removed from oven, baste the lamb. Then cover/close the lid and let it sit for 15 minutes before serving.
Enjoy this with mashed potatoes or rice.
Notes:
The lamb fat side need to be facing up when baking.
This can be cut in 3 pieces, marinated and then flipped over half way through the time for even marinating.
