Einkhorn Flour Pizza Dough Recipe

This a healthy homemade Einkhorn Flour pizza dough. This has been a tradition for me to make my own pizza ever since we got out own bread machine. I have been making my own pizza doughs for several years and am excited to share this recipe.


According to drape.com, Einkorn flour is the most ancient wheat, offering many essential dietary and trace minerals. It’s a good source of protein, iron, dietary fiber, thiamine and a number of other B vitamins. It also contains a significant amount of the powerful antioxidant lutein, with higher antioxidant levels than durum and bread wheat.

Equipment: Pizza pan (15 inch diameter), Bread machine and Rolling pin

Ingredients:
1/4 ounce (1 and 1/2 teaspoon) Active dry yeast
1 cup water, divided
1 tablespoon Olive oil
1 1/2 cups Einkhorn flour
1 1/2 cups white all-purpose flour
1/8 teaspoon salt
1/4 – 1/2 cup white flour for rolling and dusting

How to make Easy Rye Flour Pizza Dough:

Combine yeast and 1/2 cup lukewarm water in a measuring cup and mix. Cover and let it stand according to package directions, mine took 5 minutes. 
Next, pour yeast mixture in bread machine container. Then add olive oil, salt and the rest of lukewarm water.
Next, add einkhorn flour and all-purpose flour. 
Put the bread pan in bread machine and set the bread machine to pizza dough and press start. 
When done, put foil on a flat pizza pan and spray some cooking oil on top to prevent sticking. Get more white flour to help with rolling the dough.
Make a ball out of it, if it feels sticky, dust white flour over it and slightly flatten it with your hand. Using a rolling pin, roll to expand and flatten the circle shape. Continue to dust more white flour as needed to prevent from sticking to the pin and the surface. 
When the size of the dough matches the size of the pizza pan, put the pan next to it and gently pick up the dough with your hands and put it on top of the pan as center as possible.
Using the edges of the extra dough, pull out and cover any holes and any areas that seem to be too thin. Then using your fingers, twist/roll the dough on the edges so it won’t hang.
Bake at 350 degrees F for about 15 minutes or more, bake until done. It should be firm and have golden edges.
Done. Add your favorite topping to finalize the pizza.

Notes: This pizza dough can be done ahead, put this in a plastic gallon ziploc bag and keep it in the fridge no more than 3 days. When ready to roll, you may need to dust extra white flour around the dough due to moisture build up.

Prep/Cook/bake time may change when changing portions of ingredients. For 1x pizza comes out to be about 1 LB & 8 oz.
