For this recipe I decided to make spelt in replacement of pasta, which means less processed foods! Win win!


Spelt, with it’s mild, nutty flavor, is a popular alternative to wheat. It also provides several essential nutrients, such as iron, magnesium, and zinc. Consuming spelt and other whole grains may improve heart health, aid digestion, reduce the risk of diabetes, and help people achieve or maintain a healthy weight (medicalnewstoday.com)

Ingredients:

Cooking oil
1 cup uncooked spelt
1/2 pound ground turkey
1/2 teaspoon garlic powder or 1 garlic clove, minced
1 cup tomato sauce
1 cup chicken broth
1/2 teaspoons Italian seasoning
Salt
Pepper
1/2 teaspoon Worcestershire sauce
1 cups chopped fresh spinach
1 cups (4 ounces) shredded part-skim mozzarella cheese

How to make Hearty Spelt Turkey:

Cook the spelt according to the package directions.
Meanwhile, in a medium pan or pot, cook turkey and garlic over medium heat until meat is no longer pink.
Stir in the tomato sauce, broth, Italian seasoning, Worcestershire sauce, salt and pepper.
Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes or until it’s slightly thickened.
Add spinach; cook for 1-2 minutes or until spinach is wilted.
Drain spelt; stir gently into turkey mixture. Sprinkle with cheese; cover and cook for 3-4 minutes or until cheese is melted. Let it sit for 2 min, then enjoy!

Notes:

Equipment: 10 – 12 inch pan (2 inches depth)

Cook/bake time may change when changing ingredients portions.

Substitutions:
If your original recipe includes chicken, what kind of vegetarian substitutions can be made? Beans such as garbanzo, black or white beans.

Storage instructions:
How long will the food stay fresh in the refrigerator? 4 – 5 days
Can the food possibly be stored in the freezer and for how long? 2 – 3 months, possibly longer
Does this save well as left overs? Yes

Reheating instructions: In a pan add some water and cooking oil and add in the dish and cook until heated through.
