This easy low mayo deviled eggs is very quick and easy to make,
especially if the hard boiled eggs are made ahead of times, which can be made up to 1 to 2 days. You can get the recipe here for the hard boiled eggs. This is great for baby showers, pot lucks, Easter Holiday or even Fourth of July.

6 medium eggs, hard-boiled
1 tablespoon mayo
2 – 3 tablespoons plain yogurt
1 teaspoon mustard
1 medium garlic clove, grated
Salt
Pepper
Smoked paprika, for garnish
Green onions, for garnish
How to make Low mayo deviled eggs:
In a pot add the eggs and fill with water and let it cover an inch over (2 inches over if 7 – 12 eggs).
Add about one teaspoon of salt, turn the stove on high heat and let it come to a rolling boil. Turn off the stove, cover, let it sit on the hot burner. (Depending how much you want it to be cooked, it should be cooked perfectly in 10 – 12 minutes. If you have that kind of stove that doesn’t retain heat when turned off, turn the stove to low, let it simmer for two minutes, then turn off.)
Afterwards, drain the water, and rinse under cold water or put it in a bowl of iced water.
Let it be in iced water for three to four minutes. Then peel the eggs.
In a medium bowl use a teaspoon to add hard boiled egg yolks and mash with a fork.
Then add mayo, plain yogurt, mustard and grated garlic clove, salt and pepper and mix very well.
Use a teaspoon spoon to add in the egg yolk mixture into the hole in the egg whites.
Garnish with paprika and green onions. Enjoy as a snack or side dish.

Add more yogurt if needed.
