This recipe was a tradition in my family since I was a child. My mom is such a wonderful cook and taught me how to make this. I remember this soup well growing up and eating one of my mom’s wonderful soup recipe. Rice has vitamins and minerals. Onions have vitamin C that boosts the immune system. Onions also have Chromium which is great for regulating blood sugars. (According to care2.com web). I remember sitting and eating this soup with bread with my sisters. I particularly like the taste of mushrooms in this soup. And I hope you will enjoy it too.
An easy Mushroom soup recipe that is tasty and satisfying.
Prep time: 20 minutes
Cook time: 30 minutes
Servings: 8 – 10 people

3 liters of water
½ cup of rice
2 medium potatoes
1 cups of oil
1 medium onion
16 oz of mushrooms
2 tablespoons of flour
1 tablespoon of chicken base
3 tablespoons of butter
1/2 cup of milk
1 bunch of baby dill
1 bunch of parsley
salt
pepper
Heat 3 liters of water in a pot and add a 1 teaspoon of salt. Peel 2 medium potatoes and chop into cubes about ¼ inch thick. Also, peel and grate one carrot. Throw in potatoes, rice, and carrots in the pot, as soon as it boils turn down to low to simmer.
In the mean time chop onions and mushrooms.
Heat up a pan and add 1/2 cup of oil and onions. Saute for 2 minutes, then add the mushrooms. Saute for 5 minutes or until onions and mushrooms are softened. Then add 2 tablespoons of flour and mix it until the flour is cooked through.
When the potatoes and rice are ready, add the mushroom onion mixture and 1 tablespoon of chicken base to the pot and simmer.
Chop baby dill and parsley and add to the soup as well as pepper and more salt.
Then add 3 tablespoons of butter and ½ cup of milk and simmer for 5 minutes then turn off the stove. Wait for 15 minutes for the flavors to meld. Enjoy!
