Description: Easy gluten free dish with juicy chicken and buckwheat

Ingredients:

Cooking oil
1/2 cup green bell pepper, diced
1/2 medium onion, diced
1 can (4 ounces) mushrooms, drained
¼ teaspoon garlic powder
Salt
1 LB cooked chicken (with liquid), shredded
2 cups uncooked buckwheat, rinsed
1 can (10¾ ounces) cream of chicken soup
1 can (about 14 ounces) chicken broth
3 cups water

How to make One Pot Chicken & Buckwheat Recipe:

Preheat oven to 350°F. Grease 14 x 10-inch x 3 1/2 inches casserole dish/roasting pan.
Heat medium pan in medium heat, add a swish of oil and add bell peppers and onions and saute for about 3 minutes until onions are semi-transcluscent.
Then add in mushrooms and saute for 2 minutes, then garlic powder and mix and sauté for 30 seconds.
In the casserole dish/ roasting pan combine chicken, buckwheat, soup, broth, onion bell pepper mixture, and water in the roasting pan and mix. Bake covered for 30 – 45 minutes. When done, let it stand for 10 minutes before serving and enjoy!

Notes:

Equipment:
14 inch by 10 1/2 inch by 3 1/2 inch oval shaped roasting pan.

Cook/bake time may change when changing ingredients portions.

Substitutions:

If your original recipe includes chicken, what kind of vegetarian substitutions can be made? Garbanzo or white beans

Storage instructions:

How long will the food stay fresh in the refrigerator? 3 – 5 days
Can the food possibly be stored in the freezer and for how long? For about 3 -4 months, possibly longer.

Reheating instructions: In a pan add some cooking oil and water and add the chicken and buckwheat and heat on medium heat mixing occasionally until heated through.
