Desserts can be handful to make, but I chose this one, as it looks more simple to make. It is fun to entertain for a holiday

or any special occasion, whether father’s day, mother’s day, birthday, etc. And best of all it is sugar free, made with whole wheat pastry flour.

Equipment:
Two 9×1 1/2 inch or 8×1 1/2 inch round cake pans or grease on 13x9x2-inch baking pan

Ingredients:

Batter
1/2 cup butter, softened
3 eggs, room temperature
2 cups whole wheat all-purpose flour
3 tablespoons baking powder
1/2 teaspoon salt
1/2 to 1 cup coconut sugar or xylitol (or natural sweetener of your choice)
1 1/2 teaspoons vanilla
1 1/2 cups milk
2 teaspoons lime juice (optional)

Frosting
6 ounce cream cheese, room temperature
1/4 cup butter, room temperature
1 teaspoon lime juice (optional)
1/2 cup agave (or xylitol or coconut sugar)

How to make Sugar Free Yellow Cake Recipe:

Cake:
1. Let butter and eggs to stand at room temperature for 30 minutes. Grease and flour two 9×1 1/2 inch or 8×1 1/2 inch round cake pans or grease on 13x9x2-inch baking pan; set aside. Sift together flour, baking powder and salt; set aside.

  1. Preheat oven to 375 degrees F. In a mixing bowl beat butter with an electric mixer on medium to high speed for 30 seconds. Gradually add sugar, beating until well combined. Beat 2 minutes more. Add eggs one at a time, beating well after each addition. Add in vanilla, then beat in lime juice (optional). Alternate on adding flour mixture and milk, beating on low speed after each addition just until combined (alternate by thirds). Spread batter into prepared pan(s).
  2. Bake for 20 to 25 minutes for 9-inch pans, 30 to 35 minutes for 8-inch pans, 25 to 30 minutes for 13x9x2-inch pan, or until a wooden toothpick inserted near center(s) comes out clean. Cool cake layers in pans or wire racks for 10 minutes. Remove layers from pans; cool thoroughly on racks. Or place 13x9x2-inch cake in pan on wire rack; cool thoroughly.
  3. Remove cake from parchment paper (if 13x9x2-inch pan is used, divide it into three evenly).

Frosting:
As soon as cake is finished. In a bowl combine cream cheese, butter and lime juice (optional), beat, until well combined and fluffy.
Then add agave and beat until combined. With a spatula frost the cake evenly.

Notes:
Cook/bake time may change when changing ingredients portions.
This should last up to a week in the refrigerator.
