This is a great sauce for gatherings, such as Super Bowl, Basketball March Madness or anytime you crave for chicken and a very delicious dip. I first made this sauce 5 years ago

and tweaked the process along. This is so delicious to each as a chicken dip. I think chicken wings are the best to eat with this sauce.

Equipment:
Butter knife
Small pot
Wooden flat head spatula
Small sieve
Heat proof bowl

Ingredients:

1 1/4 cup water
2 whole cloves
2 1/2 ounces seedless tamarind (split in 1 inch pieces)
2 to 3 tablespoons butter
Salt
Pepper
1 tablespoon Worcestershire sauce
1 to 2 garlic cloves, grated

How to make Tamarind Sauce Dip:

In a pot on medium heat add 1/4 cup water, whole cloves and tamarind paste and sprinkle some salt on top.
Using a spatula mix and break down the tamarind paste continuously for about 5 – 10 minutes, adding 1/4 cup water every 1 to 2 minutes until it turns into a smooth sauce. Be careful that it doesn’t splatter.
When ready, turn off the stove, remove the pot and immediately strain it through a sieve using a heat proof bowl. If using a small sieve, split it in portions at a time that is a workable size (I split the tamarind mixture in three portions for straining through a sieve). Cover and set aside.
Next in the same pot (no need to wash the pot), melt the butter on medium-low heat, add salt, pepper and Worcestershire sauce. Mix and let it simmer for 1 to 2 minutes.
Add back the tamarind mixture and let it simmer for another 1 to 2 minutes. Add grated garlic and let it simmer for another 30 seconds and mix well.
Let it sit 2 – 3 minutes before serving. Enjoy to dip this with chicken wings, thighs, etc!

Cook/bake time may change when changing ingredients portions.
