Vegetarian Braised Potatoes
My mom has made braised potatoes almost all my childhood life. She has always made it with meat like beef. This is a comfort food that is great for winter. So I tried something different, I decided to make it vegetarian style and it turned out just great. I hope you will enjoy it just as much as we did.

Ingredients:
5-6 large potatoes, ¾ cube inch cuts
1 onion
2 carrots
¼ – ½ cup cooking oil
½ TSP garlic powder
¼ TSP paprika
Pinch of cayenne
Salt
Pepper
How to make Vegetarian Braised Potatoes:
In a large pot saute onion and carrots on medium heat until semi-softened.
Then add spices and sauté for 1 -2 minutes.
Then add cubed potatoes and
pour water to just barely cover the potatoes. Cover and cook on medium-low for 30 – 40 minutes until ready.
