I like making pizza with zucchini, because it is quick and easy to make and makes for a wonderful appetizer.

This just goes so well to make pizza with it. This can be done in 15 – 20 minutes. I got inspired to make this by Keto Diet Cookbook (Publication Internation, Ltd). This is great to make for an appetizer for a potluck, Super Bowl, baby shower, birthdays, etc. Here is the pizza sauce recipe I used for this zucchini pizza bite recipe.

Baking pan 17 inch 11 inch or 16 inch round pan

Ingredients:

1 medium zucchini

5 TBSP Pizza sauce

3/4 cup mozzarella cheese

2 TBSP grated parmesan cheese (like Kraft)

1 medium sausage

Cooking oil

How to make Easy Zucchini Pizza Bites:

Make sure the oven rack is in the middle, preheat to 425 degrees Fahrenheit.

Wash and dry zucchini, and slice diagonally 1/4 inch thick (there should be about 16 slices from one zucchini and possibly remaining).

Put foil on a baking sheet and spray cooking oil over it.

Spread scant 1 TSP sauce over each zucchini.

Mix mozzarella and parmesan cheese in a bowl. Then top each zucchini with 1 TBSP cheese, pressed down into sauce.

Cut sausage diagonally for half or all the zucchini pieces and put it on top of each zucchini.

Bake 5 – 7 minutes or until cheese is melted and bubbly.

Notes:

Cook/bake time may change when changing ingredients portions.
